If any of you have better ideas for a name for this dish, please feel free to share. I couldn’t figure out what to call it! This is something we threw together last week which turned out surprisingly well. (It was a bit hot, though, so if you don’t want it too spicy, you might want to substitute smoked paprika for the chipotle.) I didn’t think to measure any of the seasonings, so the measurements here are guesses.
Unfortunately, it’s also the type of meal that’s hard to make look appetizing in a picture. It’s not unappealing in real life.

- 2 lbs. cauliflower florets (I used frozen.)
- 4-6 carrots, peeled & sliced (Fairly large, chunky slices are fine.)
- 1-1.5 lbs. ground beef, browned
- about 1 c. broth (I used chicken broth, because it's what I had. Beef broth would obviously make more sense, if you have it.)
- about ½ tsp. garlic powder
- about ½ tsp. turmeric
- about 1/16 tsp. ground chipotle pepper (or smoked paprika, for less heat)
- salt & pepper to taste
- Simmer cauliflower and carrot in the broth in a covered Dutch oven until almost tender.
- Add the remaining ingredients and simmer until everything is hot, most of the liquid has been absorbed, and the veggies are tender.
